Ingredients

  • 1 Sheet Frozen Puff Pastry (Thawed but still cold)
  • 1 Egg (Beaten with 1 tsp water for egg wash)
  • Filling:
  • 4 tbsp Cream Cheese (Softened)
  • 4 tbsp Goat Cheese (Softened)
  • 1⁄4 tsp Fresh Lemon Zest
  • Pinch of Kosher Salt
  • Pinch of Cracked Black Pepper
  • 8 tbsp (1⁄2 cup) Welch's Strawberry Spread
  • Garnish:
  • 1 tbsp Fresh Thyme Leaves
  • Optional: Hot Honey or Balsamic Glaze for drizzling
  • Optional: Chopped Pistachios

Steps

  1. Preheat & Prep:
  2. Preheat oven to 400°F (200°C).
  3. Line a baking sheet with parchment paper.
  4. Prep the Pastry:
  5. Unfold the thawed puff pastry sheet on a lightly floured surface.
  6. Cut into 4 equal squares.
  7. Place the squares on the parchment-lined baking sheet, spacing them at least 1 inch apart.
  8. Using a paring knife, lightly score a smaller square about 0.5 inches from the edge to create a frame. Do not cut all the way through.
  9. Take a fork and dock (prick holes) all over the inner square. This releases steam and prevents the center from puffing up, creating a flat "well" for the filling.
  10. Make the Cheese Filling:
  11. In a small bowl with a fork, mix 4 tbsp cream cheese, 4 tbsp goat cheese, 1⁄4 tsp lemon zest, salt, and pepper until smooth.
  12. Fill the Tarts:
  13. Divide the cheese mixture evenly among the 4 squares (approx. 2 tbsp per tart). Spread it flat inside the docked center, keeping it inside the scored border.
  14. Top each cheese layer with a few dollops of Welch's Strawberry Spread.
  15. Bake:
  16. Brush the outer 0.5-inch border (the frame) with the egg wash. Try not to let the egg drip down the sides, or it will glue the layers together and stop the rise.
  17. Bake for 15–18 minutes, or until the edges are puffed high and deep golden brown.
  18. Finish & Serve:
  19. Remove from oven. While the tarts are still hot, sprinkle generously with fresh thyme leaves. The heat will release the herb's oils!
  20. Let cool for 5 minutes before serving—the jam will be like molten lava right out of the oven.
  21. Drizzle with hot honey or balsamic glaze, or top with chopped pistachios.
  22. Notes: This can be prepared with a homemade puff pastry. If using, roll to a 10x10 inch square that is 1⁄4 inch thick prior to cutting into equal squares.
